Ingredients

  • 8 oz short pasta
  • 8 oz cherry tomatoes
  • 1 block (6 oz) feta cheese
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • Fresh basil and lemon juice to finish

Instructions

  1. 1Preheat oven to 400F.
  2. 2Place tomatoes in a baking dish. Add feta block, garlic, oregano, and olive oil.
  3. 3Drizzle with olive oil. Season with pepper.
  4. 4Bake 25-30 minutes until tomatoes burst and feta is golden on top.
  5. 5Meanwhile cook pasta. Mash the baked feta and tomatoes into a creamy sauce.
  6. 6Toss pasta with the sauce. Add fresh basil and a squeeze of lemon.
