Ingredients
- 8 oz short pasta
- 8 oz cherry tomatoes
- 1 block (6 oz) feta cheese
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- Fresh basil and lemon juice to finish
Instructions
- 1Preheat oven to 400F.
- 2Place tomatoes in a baking dish. Add feta block, garlic, oregano, and olive oil.
- 3Drizzle with olive oil. Season with pepper.
- 4Bake 25-30 minutes until tomatoes burst and feta is golden on top.
- 5Meanwhile cook pasta. Mash the baked feta and tomatoes into a creamy sauce.
- 6Toss pasta with the sauce. Add fresh basil and a squeeze of lemon.
