Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 1 cup old-fashioned oats
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Maple syrup and fresh berries to serve

Instructions

  1. 1Blend all ingredients in a blender until smooth.
  2. 2Heat a nonstick skillet over medium-low heat with a light coating of butter or oil.
  3. 3Pour 1/4 cup batter per pancake.
  4. 4Cook 2-3 minutes until bubbles form on surface, flip, cook 1 minute more.
  5. 5Serve with maple syrup and fresh berries.
