Ingredients
- 2 cups long-grain white rice
- 4 cups water or chicken broth
- 1 lime, juiced and zested
- 1/2 cup fresh cilantro, chopped
- 2 tbsp butter
- 1 tsp salt
Instructions
- 1Rinse rice until water runs clear. Combine with water and salt in a pot.
- 2Bring to a boil, reduce heat to low, cover and cook 15 minutes.
- 3Remove from heat and rest covered 5 minutes.
- 4Fluff with a fork. Stir in butter, lime juice, lime zest, and cilantro.
- 5Serve as a side or base for bowls.

Keeps 4 days refrigerated. Reheat in microwave with a damp paper towel.
