Cilantro Lime Rice

Ingredients

  • 2 cups long-grain white rice
  • 4 cups water or chicken broth
  • 1 lime, juiced and zested
  • 1/2 cup fresh cilantro, chopped
  • 2 tbsp butter
  • 1 tsp salt

Instructions

  1. 1Rinse rice until water runs clear. Combine with water and salt in a pot.
  2. 2Bring to a boil, reduce heat to low, cover and cook 15 minutes.
  3. 3Remove from heat and rest covered 5 minutes.
  4. 4Fluff with a fork. Stir in butter, lime juice, lime zest, and cilantro.
  5. 5Serve as a side or base for bowls.
