Creamy Tuscan Chicken

Ingredients

  • 4 chicken breasts, pounded to even thickness
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup spinach, roughly chopped
  • 1/4 cup parmesan, grated
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt, pepper, and pasta or crusty bread to serve

Instructions

  1. 1Season chicken with salt, pepper, and Italian seasoning.
  2. 2Heat olive oil in a large skillet over medium-high. Sear chicken 4-5 minutes per side until golden. Remove.
  3. 3In the same pan, saute garlic 30 seconds. Add cream, parmesan, sun-dried tomatoes, and spinach.
  4. 4Simmer 3-4 minutes until sauce thickens slightly.
  5. 5Return chicken to the pan. Simmer 5 minutes until chicken is cooked through.
  6. 6Serve over pasta or with crusty bread to soak up the sauce.
