Ingredients
- 4 chicken breasts, pounded to even thickness
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup spinach, roughly chopped
- 1/4 cup parmesan, grated
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- Salt, pepper, and pasta or crusty bread to serve
Instructions
- 1Season chicken with salt, pepper, and Italian seasoning.
- 2Heat olive oil in a large skillet over medium-high. Sear chicken 4-5 minutes per side until golden. Remove.
- 3In the same pan, saute garlic 30 seconds. Add cream, parmesan, sun-dried tomatoes, and spinach.
- 4Simmer 3-4 minutes until sauce thickens slightly.
- 5Return chicken to the pan. Simmer 5 minutes until chicken is cooked through.
- 6Serve over pasta or with crusty bread to soak up the sauce.
