Ingredients

  • 1 lb boneless chicken breasts
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tsp grated ginger
  • 2 cloves garlic, minced
  • 8 oz cooked white or brown rice
  • 3 cups mixed greens (such as arugula and spinach)
  • 1/4 cup sliced green onions

Instructions

  1. 1Preheat oven to 400°F; line baking sheet with parchment paper.
  2. 2Toss chicken in soy sauce, honey, ginger, and garlic on the prepared baking sheet.
  3. 3Bake for 12-15 minutes or until cooked through.
  4. 4Cook rice according to package directions.
