Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 2 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tbsp Kalamata olives, pitted
  • Feta cheese, crumbled (optional)

Instructions

  1. 1Cook quinoa according to package directions.
  2. 2Heat olive oil in skillet, sauté bell pepper and onion 5 minutes.
  3. 3Add cherry tomatoes, cook until tender.
  4. 4Stir in garlic, cook 30 seconds.
  5. 5Combine cooked quinoa with vegetable mixture; top with olives and feta.
