Ingredients

  • 1 cup Arborio rice
  • 4 cups chicken broth, warmed
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 8 oz mixed mushrooms (button, cremini, shiitake)
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. 1Heat oil in skillet over medium-high; add onion, cook until softened.
  2. 2Add Arborio rice; cook 2 minutes, stirring constantly.
  3. 3Warm broth in separate pot; pour into rice mixture in 1-cup increments.
  4. 4Stir after each addition until liquid is mostly absorbed.
  5. 5Add mushrooms and garlic; cook until tender.
  6. 6Remove from heat; stir in Parmesan cheese.

Storage & Reheat

Refrigerate up to 2 days, reheat with additional broth as needed; can freeze for 3 months.
