One-Pan Lemon Chicken
Ingredients
- 4 boneless, skinless chicken breasts (6 oz each)
- 2 lemons, juiced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup mixed frozen vegetables (e.g. peas, carrots)
Instructions
- 1Heat oil in large skillet over medium-high heat.
- 2Add chicken; cook until browned on both sides, 5-6 min total.
- 3Squeeze lemon juice over chicken, sprinkle with thyme and salt.
- 4Add mixed vegetables to pan; stir to combine with chicken and sauce.
- 5Reduce heat to low, simmer 2-3 min or until chicken is cooked through.
