Ingredients

  • 4 boneless, skinless chicken breasts (6 oz each)
  • 2 lemons, juiced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup mixed frozen vegetables (e.g. peas, carrots)

Instructions

  1. 1Heat oil in large skillet over medium-high heat.
  2. 2Add chicken; cook until browned on both sides, 5-6 min total.
  3. 3Squeeze lemon juice over chicken, sprinkle with thyme and salt.
  4. 4Add mixed vegetables to pan; stir to combine with chicken and sauce.
  5. 5Reduce heat to low, simmer 2-3 min or until chicken is cooked through.

Storage & Reheat
