One-Pan Sausage and Veggies

Ingredients

  • 1 lb Italian sausages (pork or chicken)
  • 2 cups baby potatoes, halved
  • 2 cups broccoli florets
  • 1 red bell pepper, chunked
  • 1 yellow onion, chunked
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper

Instructions

  1. 1Preheat oven to 425F.
  2. 2Toss potatoes with 1 tbsp oil, salt, and pepper. Spread on a sheet pan.
  3. 3Roast potatoes 15 minutes. Push to the edges.
  4. 4Toss sausages and veggies with remaining oil and Italian seasoning.
  5. 5Add to center of pan. Roast 15-18 minutes, turning sausages halfway.
  6. 6Serve directly from the pan with mustard or your favorite dipping sauce.
