Sheet-Pan Salmon & Veggies

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 lb asparagus or green beans
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • 2 tsp dill, salt, pepper

Instructions

    1Preheat oven to 400°F.
  1. 2Arrange vegetables on sheet pan, toss with 1 tbsp oil and season.
  2. 3Roast vegetables 8 minutes.
  3. 4Push veggies aside, place salmon fillets on pan.
  4. 5Drizzle salmon with remaining oil, season with dill, salt, pepper, and lemon.
  5. 6Return to oven 10-12 minutes until salmon flakes easily.
